There's no factory behind Maa ki Rasoi. There's one home kitchen in Aurangabad, Bihar, a gas chulha, a few steel degchis passed down from her own mother, and a woman who wakes up before sunrise whenever an order comes in that needs to be made fresh.

Orders aren't made in advance and stored — they're started only after you place them. That's why made-to-order items take a couple of days: real ghee has to melt slowly, real dough has to rest properly, and nothing is rushed just to ship faster.
